Spring 2020 Class Schedule

Join us for an educational experience! Our classes are a guided and seated tasting with focused instruction of each cheese! All classes include 5-7 cheese types, additional accoutrements (bread, olives, jams, nuts), pairings, and a tasting menu! Cheese, cheese log books and cheese storage paper will be available for purchase following each class.
All classes are held at our 1661 Mission Dr Solvang store location unless otherwise noted.

Brie Mine: cheese & chocolates

February 14 6:30pm- Join us for a romantic cheese class focusing on ooey gooey soft-ripened cheeses and artisanal chocolate truffles from local producer Jessica Foster. $35/person

Library Wine & Cheese Pairing

February 15 2pm- Join us at the beautiful Brave & Maiden estate for a barrel room pairing of 5 library wines with 5 exceptional French cheeses. $65/person

Cheese 101: An Introduction to the 7 styles of cheese

February 16 6pm- We will taste through 7 styles of cheese from all over the world while learning about each style. This class gives a great foundation upon which to build your cheese knowledge. $35/person

Blind Cheese Tasting: ​guess that milk type

February 20 5:30pm- Ever wonder what the difference in milk type makes on the flavor profile of cheese? Join us for a blind tasting where we will taste cheeses of the same style whose only variable is milk type, as we learn to define and recognize the impact milk type has on flavor. $25/person

French Fromage: ​oui! oui!

February 27 5:30pm- Join us for a tasting and history of the great variety and exceptional flavor produced by the world-renowned cheesemakers of France. $35/person

Washed-rind Cheeses: ​the stinky bunch

March 4 5:30pm- Come experience the ancient art of washing cheese as it ages. This recipe produces the most pungent and aromatic group of cheeses and has been done for thousands of years! $35/person

Spanish Cheeses: queso beuno

March 22 5pm- We will highlight all Spanish cheeses, Spanish accoutrements, and Spanish wine grape varietals. A regional delight! $35/person

Cheese 101: An Introduction to the 7 styles of cheese

March 26 5:30pm- We will taste through 7 styles of cheese from all over the world while learning about each style. This class gives a great foundation upon which to build your cheese knowledge. $35/person

The Blues: ​penicillium roqueforti in all it's glory

April 2 5:30pm- Welcome to the house of blues. We will taste through all blue cheeses, learn about how they are made and the cultural significance and history behind each one. We will also taste and discuss some unique ways to pair the blues! $35/person

Italian Cheese: il formaggio

April 8 5:30pm- A regional class focused on all things Italian! We will taste through some classic Italian cheeses from soft and creamy to hard and salty. $35/person

Cheeseboard Design: a hands-on 'how to'

April 15 5:30pm- Learn from the pros! Tips and tricks for entertaining with cheese. From what to shop for to how to plate it we'll share the do's and don'ts!​ $40/person

April 23 5:30pm- Creative and unique ideas for pairing, snacking, and cooking with cheese. What to shop for and some fail-safe methods. $35/person

Charcuterie Week 'Charc Week': ​all cured meats

April 30 5:30pm- Immerse yourself in the mouthwatering world of cured meats. We will taste through pates, rillettes, salamis, prosciutto, and iberico with some treats of duck, elk, venison, and truffle to enjoy with the pork. Learn the wild world of salting, smoking, and curing meats. $35/person

Alpine Cheese: why copper vats are all that

May 3 5pm- Cooked in massive copper vats, pressed at high Alpine altitudes, and made only of the freshest summer milk while feeding on green pastures, these cheeses are sure to impress! $35/person

It's All Gouda: a history and tasting of Gouda

May 7 5:30pm- Taste through Goudas of varying milk type and learn the process and history of the cheese that is the pride and joy of Holland. $35/person

Spring Blooms: button wheels and rose wine

May 10 5pm- Bring mom for a class she is sure to enjoy! Fresh spring cheeses produced seasonally and delightful rose wine, a match made in heaven! $35/person
